Melon Prosciutto Salad

If you follow me on instagram then you know I’m all about easy salads for summer time.  The last thing I want to do is hang out in the kitchen when it’s gorgeous outside, so that means everything we eat is either grilled or simple and fresh.

Or peanut butter and jelly if you are little man, since he is the pickiest eater alive.

Prosciutto melon Salad

 We have this amazing downtown indoor/outdoor farmers market about 25 minutes from us in Grand Rapids.  If you are local and haven’t been,  you need to check it out! I head there every Thursday and plan our whole weekend menu around what’s fresh and delicious there that week.  No plan or menu in mind, just whatever I find that looks good.  Which usually means about a pound of amazing types of cheese, fresh baguette, a great piece of fish and some fruit and veggies.

Ok that all sounds a bit too healthy I should mention that every week my little man and I split a banana nutella crepe while we wander around :)

Last week they had the most amazing prosciutto that I picked up so I made this easy Melon Prosciutto salad – it’s so good and crazily simple!  Ready for the recipe?

Melon Prosciutto Salad

Melon Prosciutto Salad
 
Ingredients
  • ½ Melon (cantaloupe), cubed
  • 6 pieces of thinly sliced prosciutto, chopped
  • ¼ red onion thinly sliced
  • 1 bag of arugula
  • drizzle of olive oil
  • drizzle of balsamic vinegar (you can reduce it to make it a big thicker by boiling it down)
  • fresh cracked pepper
Instructions
  1. Top arugula with melon, prosciutto, and onion.
  2. Drizzle with olive oil and vinegar and top with fresh cracked pepper.
  3. Grab a fork and dig in!

    They say that confession is good for the soul so you should be feeling better about eating your Nutella crepe but I have discovered that if noone sees me eating something — the calories don’t count. (I try not to be by myself too much :-) ) I’l like to shake the hand of whoever thought up Nutella — what a genius. Oh! The salad does look good I can’t wait for all the melons to be in season.

      So I’m totally adopting that rule, if no one sees me eat it, it didn’t happen…if you need me I’ll be hiding in the pantry eating cookies :)
