Blueberry Cream Cheese Granola Muffins
That’s gotta be the longest muffin name ever but I was experimenting in the kitchen this week and sorta just started throwing everything I had leftover in the batter – and they are so good!!
I started out with my mom’s blueberry muffin recipe and added cream cheese, granola, cinnamon, and vanilla. So, ok yeah, these are not your healthy breakfast muffins, they are more like cupcakes pretending to be muffins. You gotta splurge every once and while, right?
First mix your dry ingredients including the granola.
Then mix your wet ingredients and combine with the dry. Mix well and toss in your berries, mix gently.
I like to use my handy dandy cookie scoop to fill my muffin pans, and my little chef in training insisted on using only the pink muffin liners.
Top with more granola and a sprinkling of sugar.
Bake at 350 and watch thru the oven window counting down the minutes!

You might as well go all out and add some more butter at this point :)
These are so good, the cream cheese makes them moist and rich and the granola gives a little crunch.

Kelly–I was gonna make these today until I realized I was out of granola cereal, I have everything else. Do you think if I just used quick oats it would work? Otherwise I do have a homemade granola recipe, I suppose I could make first and then the muffins…. what do you think?

These look delish. I may have to try these this weekend. I have never added cream cheese to muffins before – can’t go wrong with cream cheese though. I love that Seinfeld episode – but these look too good to toss the stumps.

And just had to tell you this is the first time I “pinned” one of your posts :) Can’t wait to try this with my home grown blueberries next summer. As I type that I realize, I think I still have some frozen……
