Goat Cheese Crostini and Moscow Mule Cocktail

So it was my birthday a few weeks ago. Like a big birthday. Like maybe my age now begins with a brand new shiny 3 instead of the younger hipper 2. Like my teenage self thought that by now I’d have 2 kids, mortgage payments and mom jeans…ok so I do have 2 out of 3  :)  but it’s ok bring on the 30’s! I’m ready as long as it means I don’t actually have to grow up.

The Mr. took me to Chicago for the weekend to celebrate with friends. We used to live there and it is still one of my favorite cities. After dragging him all over the magnificent mile shopping – the man deserved a cocktail, so we stopped at Bandera’s which has a great little bar area. My hubby always has to try something different so he ordered the drink special a Moscow Mule, and he was hooked.

It is really refreshing  and crisp with a bit of a gingery bite from the ginger beer plus they come in these cute little copper cups! We asked the bartender to share his recipe so we could make them for ourselves and I promptly bought my own cute little cups off of amazon (although I would love to get my hands on some cool vintage ones!).

Moscow mule cocktail

RECIPE:

Fill cup 2/3 full of ice, add 3 ounces vodka, 1.5 ounces ginger beer, 1.5 ounces sweet and sour mix add a fresh mint sprig and enjoy!

You can’t have cocktail hour without a snack, and my easy goat cheese crostini pair perfectly with these.

These could not be simpler, my kids even love this one.

RECIPE:

Slice baguette thinly and toast in the oven (on broil)  until golden brown. Spread a layer of goat cheese on the bread, top with chopped pistachios, and drizzle with honey. The Mr. likes to add a little fresh cracked pepper on his.

I accidentally grabbed sweet chili flavored pistachios at the grocery store and they actually added a nice kick.

  1. I LOVE Moscow mules but since tracking down ginger beer can be a pain, I recently tried the American Mule at Wildfish. Skyy ginger vodka, ginger ale and lime juice. De-LISH!!!

    1. ooh yum! That sounds awesome, definitely going to have to try that, thanks for sharing. Yes, ginger beer is hard to come by, I order mine off Amazon.
