The flavors and textures of this salad are perfect any time of year but I always love beets in the fall especially.

Goat Cheese Beet Salad

This goat cheese and beet salad is so yummy and good for you too! The crunchy carrots and beets are perfect with the creaminess of the goat cheese. The sweetness of the honey vinaigrette and the saltiness of the pistachios just tops it off.

Ingredients
  

  • baby greens
  • 1 beet
  • 1 large carrot
  • 2 ounces of goat cheese
  • 1/4 C shelled chopped pistachios
  • Honey Vinaigrette -
  • 1/2 C olive oil
  • 1/4 C red wine vinegar
  • 1 tbs lemon juice
  • 1 1/2 tbs honey
  • salt and pepper

Instructions
 

  • Place baby greens on plates, top with thinly sliced raw beets (I like to chop mine into little matchsticks), carrot shavings, crumbled goat cheese and pistachios.
  • Shake all the salad dressing ingredients together in a jar and drizzle over salad - enjoy!

  1. Can you come over and teach me how to take a photo…I’ve been at it for over a year and mine still look like your first one. :) Beautiful pix and I cannot wait to try this salad – YUM!

    1. Your photos look great Kim! The biggest difference was getting a DSLR camera vs a point and shoot, the 2nd was learning how to shoot manual, and the third was never photographing anything at night – the photos never look good without good lighting! My friend Courtney at Sweet C’s Designs has a user friendly, easy to use photography series that was really helpful too – good luck :)

  2. I can’t wait to try this…I have a Spinach Salad you might want to try…Fresh Spinach, matchstick carrrots, purple onions sliced, tomatoes and Ken’s Raspberry Walnut Vinaigrette dressing. Mix the four ingredients, add dressing and toss SERVE AND ENJOY! Hope you like it! Have a great day!
