Chocolate Fallen Cake

Hi everyone!  Whew, we have almost made it through the week!  Both my munchkins have horrible ear infections (the preschool germs just keep on giving) so it has been a loooooooooong week thus far, not to mention sleepless.   I’m wishing I had another serving of this cake and a nap right about now :)

Earlier in the week I shared the Warm Spinach Salad with Goat Cheese Fritters that I made this past weekend for the Mr. and I for dinner.  Now we can get to the good stuff!

and so worth the extra miles at the gym…
ok, I soooo didn’t go to the gym the next day, but I did go to Home Goods!  I’m sure I logged a few miles shopping :)

This is another recipe I adapted from The Common Grill cookbook “Return to the Common Grill”.
(You can find the book on their website, seriously, go pick it up!)

First make your cakes

Then the caramel sauce

Lastly the Toffee Pecans

Assemble and enjoy (don’t forget the ice cream)!

RECIPE
 
CAKE
Grease 4 ramekins (I used 7 oz  but whatever you have will work, just adjust your cooking time)  
Put 6 oz bittersweet chocolate and 1/2 cup butter in a double boiler (I don’t actually have one but a glass or metal bowl over a pot of boiling water works too) until melted, cool slightly.
Mix 1/2 C sugar, 1/4 C flour and 3 eggs in a bowl, beat until fluffy and thick.  Add the cooled chocolate mixture (make sure it’s cool so you don’t scramble your eggs!)
Pour in ramekins and bake at 350 for 15 to 20 min.
 
CARAMEL SAUCE (you can just buy the jarred kind, it’s really all about the cake, but extra credit to you if you make your own!)
Dissolve 1 C sugar into 1/4 water over low heat in a saucepan.  Bring the heat up a bit and cook until golden colored.  Remove from heat and add 1/2 C whipping cream a little at a time stirring well.  Add  2 tsp vanilla.
 
TOFFEE PECANS
Mix 1 tbsp butter with 2 tbsp sugar, a pinch of salt and 1/2 C pecans in a saucepan cooking until sugar caramelizes, about 5 minutes.  Spread on a cookie sheet to cool.
 
 
I made these during nap time and reheated them in the microwave at night for the Mr. and I.  
It made 4, so I had a few willing taste testers :)
 

She did manage to get a few bites actually in her mouth :)

 
Little man woke up just in time to sneak a few bites from his sister.
 
It was a hit!
