Mason Jar Mud Pies

Sometimes when blogging about food I have to make certain sacrifices.

Like forcing my family to eat dinner at 4:00 so that I can take photos when the light is good.

Or having to reheat everything because it has been sitting so long while I photograph it.

Or eating coffee ice cream for breakfast…yeah…it was rough, but someone had to taste test!

Then I couldn’t just stop at coffee ice cream I had to make mud pie. Which after photographing, I put in the freezer to eat later…

I waited a whole 5 minutes and had to eat it…

at 10:00 am, like the responsible healthy person I am.

I also let my kids have an Oreo each, because I wasn’t sure how to explain why I get to eat cookies and ice cream for breakfast and they didn’t (for the record they each had a banana and a bowl of rice krispies too, I’m not a total delinquent).

So I wanted to share this recipe with you for Mason Jar Mud Pies, but I just wanted you to know about all the sacrifices that went in to making them :)

I say recipe but it’s more just assembling – although I made my own coffee ice cream and I will share the recipe for that at the bottom. I’ve made mud pie before, but I thought it would be so easy to whip up in individual mason jars. These would also be great for a party.

Just smash a bunch of Oreos in a ziploc bag, sprinkle the cookie crumbs in the bottom of the mason jar. Then layer coffee ice cream, hot fudge, more ice cream, whip cream and finally top with more Oreos. Easy right? You can make these ahead of time and freeze them, just leave the whip cream off and add it right before you are ready to serve.

As promised here is the simple coffee ice cream recipe, you could definitely use store bought though.

Mason Jar Mud Pies

Ingredients
  

  • 2 cups heavy cream
  • 2 1/2 cups whole milk
  • 1/2 cup strong coffee chilled
  • 1 cup sugar
  • 1 tsp vanilla

Instructions
 

  • Mix all ingredients and pour into ice cream maker according to your ice cream maker instructions.
  • Freeze and enjoy!

    1. They are crazy right? I mean they can’t just run? They have to swim and bike too and make me feel completely lazy ha :)

  5. I fell in love with Mud Pie when I lived in Hawaii. Those gigantic wedges of pie that they served at Chart House were to die for. I used to make it all the time after we moved back to Michigan, but haven’t in the longest time. This is a great idea for Father’s Day ~ of course, I don’t know if it will ever make it to Kalei ;)
