Hot Chicken Salad

Creamy chicken salad with celery, cheese, pimentos and a crunchy topping.

Ingredients
  

  • 1.5 lbs cooked, shredded chicken
  • 4 stalks celery diced
  • 1/2 c light sour cream
  • 1/2 c mayonaise
  • 1 tsp dried minced onion
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 ounce jar of pimentos
  • 1 c shredded cheddar cheese
  • 1 c potato chips

Method
 

  1. In a large bowl combine mayo, sour cream, minced onion, salt and pepper. Mix well.
  2. Add diced celery, jar of pimentos (drained), shredded chicken, and cheese.
  3. Spread mixture into a greased 9x13 pan or 2 quart casserole dish.
  4. Crush potato chips on top.
  5. Bake at 350 for 30-40 minutes or until hot and bubbly.
