Hot Chicken Salad
I’m not typically a big casserole person, but every once in a while I get a craving for a good cheesy, creamy, comfort food meal. This hot chicken salad recipe is it for me! It’s perfect on a cold rainy day. It only takes about 10 minutes to whip up with stuff you probably already have in your fridge and pantry. It’s a super easy weeknight meal.
Chicken salad is a fave of mine all year long, but this hot version is the best. I like to use a rotisserie chicken from the grocery store to really keep this recipe simple. You could use leftover chicken or bake some chicken breasts in the oven as well.
This hot chicken salad recipe gets it’s creaminess from a combination of sour cream and mayonnaise. I like to use light sour cream to lighten it up a bit sometimes.
The creamy sauce combined with the crunch of the celery and topping is SO good!
The crunchy topping is crushed up potato chips. Like I said we are living a little with this recipe! Creamy, cheesy, crunchy – it doesn’t get better than that when it comes to comfort food.
Hot Chicken Salad
Ingredients
- 1.5 lbs cooked, shredded chicken
- 4 stalks celery diced
- 1/2 c light sour cream
- 1/2 c mayonaise
- 1 tsp dried minced onion
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 ounce jar of pimentos
- 1 c shredded cheddar cheese
- 1 c potato chips
Instructions
- In a large bowl combine mayo, sour cream, minced onion, salt and pepper. Mix well.
- Add diced celery, jar of pimentos (drained), shredded chicken, and cheese.
- Spread mixture into a greased 9×13 pan or 2 quart casserole dish.
- Crush potato chips on top.
- Bake at 350 for 30-40 minutes or until hot and bubbly.

Hot Chicken Salad Tips –
- I like to serve this with a big green salad and steamed green beans.
- You can make this ahead of time and refrigerate just add to the cooking time.
- This reheats really well for leftovers.
This hot chicken salad is good but too rich to be a casserole. Next time I’ll add crackers, radishes, apple slices, etc. anything on a board.
