Chicken Caesar Pitas

This is the easiest weeknight meal recipe ever. If you can even call it a recipe, really you just assemble a few things, but it is always a hit with the kids and the Mr.

This is my go to meal for a busy night, because you can grill the chicken the day before or during nap time if need be and it takes 5 minutes to assemble when you are ready to eat.

First marinate your chicken in regular old Italian dressing for a few hours, and then pound with a meat mallet (or your fist if you need to get out some aggression) until a little thinner.

Then grill. (and yes I made this last week in the middle of a snow storm, but you could do it on a grill pan inside, or like a sane person wait til summer)

Buy a package of pita bread (or make your own, which actually isn’t hard but that defeats the purpose of the easy weeknight meal thing!)

Grill that too (or if you make the chicken ahead of time you can do it on the stove in a frying pan), sprinkle with a little water while grilling, so it stays soft – if it gets too crispy you can’t fold it in half.

Fold the bread in half (like a taco shell) when done grilling.

I like to bring everything in on a big platter. Let your chicken rest for at least 5 minutes before slicing into thin slices.

Get yourself a caesar salad kit – or some romaine lettuce and caesar salad dressing (you can make your own too, but again EASY weeknight recipe :) )

Toss.

Assemble, and add more parmesan cheese.

RECIPE

3-4 boneless skinless chicken breast

pita bread

caesar salad kit

shredded parmesan cheese

Marinate chicken for 3- 4 hours in the italian dressing. Place chicken between 2 pieces of plastic wrap and pound with a meat mallet until evenly thin. Grill chicken for 4-5 min per side. Let rest and slice in to thin pieces.

Grill pita bread, sprinkle with water while grilling to help it stay soft. Fold in half like a taco shell.

Toss salad, and place salad, chicken and parmesan cheese into pitas.

  1. Well done! I laughed a little when you said you grilled in the midst of a snow storm. We’ve done that many times.. some things just taste better on the grill! This is such a great idea for a busy weeknight. You save so much time using the salad in a bag .. and then simply assembling everything.

  2. I honestly haven’t had pita bread in probably 20 years. I’ve always looked at it in the store and wondered what to do with it. I think my kids would actually really enjoy this, so I’m going to give it a shot this weekend. Thanks for the recipe!
