Meatloaf Meatballs

Meatballs filled with carrots, red peppers, and cottage cheese.

Ingredients
  

  • 2 lbs ground beef
  • 1 tbsp butter
  • 1/4 c red pepper diced
  • 1/2 c carrots diced
  • 1/2 c onion diced
  • 1 c cottage cheese
  • 1 1/2 c bread crumbs
  • 2 eggs
  • 1 tsp salt
  • 1 tsp poultry seasoning
  • 3/4 c ketchup
  • 1/3 c brown sugar
  • 1 tbsp mustard

Method
 

  1. Preheat oven to 400 degrees.
  2. Sauté the diced red pepper, carrots, and onions in butter for 5-10 minutes over medium heat until softened. Allow to cool.
  3. Meanwhile in a large bowl add ground beef, cottage cheese, bread crumbs, seasoning and eggs.
  4. Add the cooled cooked veggies.
  5. Use your hands to combine the mixture really well. Use 1/4 cup to measure out mixture and form into balls.
  6. You should have about 20 medium size meatballs. Place on a rimmed greased cookie sheet.
  7. Bake at 400 for 30-40 minutes until cooked through.
  8. For the sauce combine ketchup, sugar, and mustard in a saucepan and simmer until the sugar is melted about 5 minutes.
  9. Serve the meatballs with the sauce or ketchup.
