Meatloaf Meatballs

I have to admit I have never been a big meatloaf fan. My mom never made it growing up and the name is just not doing it any favors. However, my mother in law made this meatloaf and it is SO delicious. My own little twist to get my kids on board is to make them into Meatloaf Meatballs.

For some reason meatloaf sounds scary to my kids, but meatballs sound delicious! The best part of the meatloaf was always the crispy ends of the loaf. Making them into meatballs gives you that crispiness on each one.

This recipe is different than any other meatloaf I’ve had. It has cottage cheese, carrots, red peppers, and onions. It’s really flavorful and delicious, not to mention a great way to hide extra veggies in a meal for picky eaters.

Cottage cheese is also having a moment right now. The cottage cheese in this recipe makes these meatballs really moist, and adds an extra bit of protein too.

I like to serve these meatloaf meatballs with mashed potatoes and sugar snap peas, or green beans.

This recipe also calls for a side sauce of ketchup, mustard, and brown sugar. You can always go old school and just use plain old ketchup too.

This has really become a family favorite recipe in our house.

Meatloaf Meatballs

Ingredients
  

  • 2 lbs ground beef
  • 1 tbsp butter
  • 1/4 c red pepper diced
  • 1/2 c carrots diced
  • 1/2 c onion diced
  • 1 c cottage cheese
  • 1 1/2 c bread crumbs
  • 2 eggs
  • 1 tsp salt
  • 1 tsp poultry seasoning
  • 3/4 c ketchup
  • 1/3 c brown sugar
  • 1 tbsp mustard

Instructions
 

  • Preheat oven to 400 degrees.
  • Sauté the diced red pepper, carrots, and onions in butter for 5-10 minutes over medium heat until softened. Allow to cool.
  • Meanwhile in a large bowl add ground beef, cottage cheese, bread crumbs, seasoning and eggs.
  • Add the cooled cooked veggies.
  • Use your hands to combine the mixture really well. Use 1/4 cup to measure out mixture and form into balls.
  • You should have about 20 medium size meatballs. Place on a rimmed greased cookie sheet.
  • Bake at 400 for 30-40 minutes until cooked through.
  • For the sauce combine ketchup, sugar, and mustard in a saucepan and simmer until the sugar is melted about 5 minutes.
  • Serve the meatballs with the sauce or ketchup.
