Balsamic Strawberry Burrata with Focaccia
If burrata is on the menu there is a good chance I’m ordering it! Pair it with fresh strawberries in the summertime and it doesn’t get any better. Dan and I recently tried a new restaurant (GinGin in Grand Rapids for you locals) and we had the best balsamic strawberry burrata with focaccia appetizer. I knew immediately I would try to recreate it at home. This is SO delicious and could not be easier to throw together.

If you can’t find fresh burrata this would be delicious with whipped ricotta as well.
Ingredients:
- Burrata
- Strawberries
- Honey
- Balsamic vinegar
- Basil
- Pistachios
- Focaccia
This recipe is hardly even a recipe it’s basically marinating some strawberries and throwing it all together.

The creamy burrata paired with the sweet strawberries and the tartness of the balsamic vinegar is so good. Top it with fresh basil and pistachios for crunch. Soooo good!
The other key here is focaccia bread. You can definitely make your own, and it’s pretty easy to do, but store bought works great too. Any kind of focaccia is fine, but the secret is to toast it up in a pan on the stove with some olive oil. Cut the focaccia into slices and lightly sauté them in a pan with a bit of olive oil. You want them to be slightly golden brown and crunchy.

If you want to serve this to a crowd you could easily serve these crostini style. Top each individual slice of burrata with a few marinated strawberries, and a sprinkle of basil and pistachios.

Ingredients
Method
- Slice strawberries and place in a small bowl.
- Top with honey and balsamic vinegar and mix well. Salt and pepper. Allow to sit for 20-30 minutes.
- Break up a ball of burrata on a plate.
- Top with the strawberries, basil, and pistachios.
- Drizzle with leftover syrup from the strawberries. Salt and pepper.
- Toast focaccia pieces in a pan with olive oil and serve on the side.
