Grilled Chicken Peach Kebabs

With the temps warming up I have summer grilling on the brain. I love grilling our dinner in the summer time and try to use it as much as possible. One of my favorite easy go to meals is any kind of protein and veggies on a skewer. It’s easy to mix and match for picky eaters. One combo that everyone loves are these Grilled Chicken Peach Kebabs.

As soon as I see peaches in the grocery store, I grab them to make this easy grilled dinner. We love using peaches, but any kind of stone fruit will do. I’ve used plums and nectarines as substitutes before as well, and it’s just as delicious.

The key to this grilled chicken peach kebab recipe is really good apricot jam or fruit spread. It gives such a nice sweet flavor and glaze to the chicken. Soy sauce adds a hint of saltiness to the marinade as well.

Once you are done marinating the chicken, boil the leftover marinade to use as a basting glaze while grilling. Not only does it add a ton of flavor, but the glaze looks so pretty on the chicken.

  • 1/4 c light olive oil
  • 1/2 c apricot jam
  • 4 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • 1/2 tbsp dry minced onion
  • 2 lbs boneless skinless chicken breasts cut into pieces
  • 1 onion cut into chunks
  • 4 peaches cut into quarters

  • Combine oil, jam, soy sauce, balsamic vinegar and dried minced onion in a bowl. Whisk until combined.
  • Add the chicken pieces to the bowl and marinate for at least 30 minutes.
  • Remove the chicken and thread on skewers alternating with the onion and peach pieces.
  • Pour the leftover marinade into a saucepan and boil for 2-3 minutes stirring frequently.
  • Grill skewers on medium heat, turning frequently for 10-15 minutes until chicken is cooked throughly. Baste with the marinade as you grill.
  • I like to serve with grilled asparagus on the side. Enjoy!
